Choco Peanut Butter Cookies
This recipe is from Quaker Oats. I haven't made it yet, but it sounds
good.
- 1.5 cups firmly packed golden brown sugar
- 1 cup peanut butter
- .75 cup butter
- .33 cup water
- 1 egg
- 1 teaspoon vanilla
- 3 cups Quaker Oats (uncooked)
- 1.5 cups all-purpose flour
- .5 teaspoon baking soda
- 1.5 semi-sweet chocolate chips
- 4 teaspoons vegetable shortening
- .33 cup peanuts, chopped (optional)
Heat oven to 350 degrees. Beat brown sugar, peanut butter and buter
until fluffy. Blend in water, egg and vanilla. Add combined oats,
flour and baking soda; mix well. Cover; chill for one hour. Shape into
one inch balls. Place on ungreased cookie sheet. Using bottom of
glass, which is dipped in sugar, press into .25 inch thick
circles. Bake for 8 to 10 minutes or until edges are golden
brown. Remove and place on a wire rack to cool completely.
Melt chocolate cips as package directs; stir in vegetable shortening,
mixing until smooth. Top each cookie with .5 teaspoon of melted
chocolate; sprinkle with chopped peanuts. Chill until set. Store
tightly covered.
